Bill Fellows<p>Not sure what I did but this loaf of <a href="https://dataplatform.social/tags/glutenFree" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>glutenFree</span></a> is back to being a dense brick. I suspect insufficient hydration as what I was kneading wasn't the sticky mess the last few generations have been. Could also be that it got over proofed, I was splitting attention between this and my chores. Ah well, better bread next time</p>

Eugenia L<p>Saw a dream last week where I asked what jobs can still make money, and was hit with massive amounts of information that physically hurt while sleeping.</p><p>The next day I suddenly wanted to open a burger joint with both meat and vegan options, 100% gluten, soy, dairy and nut-free. Go figure.</p><p>Won't happen though, because I'd be working at the exact same time everyone else is not. How? Great question as I threw out the scientific method. But I am interested in her flour mixes and ratios. <br>Pleased with the height. Needed to bake a bit longer and get covered with foil to stop the browning. Curious if a slash would help the steam escape better and dry up the interior</p>

Bec<p>It's Easter break and I am relishing the time away from my desk and the screen and instead, baking. This bread is vegan and gf (which sounds ridiculously extra but one of us is coeliac with an egg allergy) and it tastes like... bread? Instead of... moist egg carton? </p><p>Other positives: high in fibre and not an intimidating number of ingredients. Bill Fellows<p>I did not space off today when baking a loaf of <a href="https://dataplatform.social/tags/glutenFree" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>glutenFree</span></a> bread (see also <a href="https://dataplatform.social/@billinkc/114327934778482165" rel="nofollow noopener noreferrer" translate="no" target="_blank"><span class="invisible">https://</span><span class="ellipsis">dataplatform.social/@billinkc/</span><span class="invisible">114327934778482165</span></a>) and I thought it might be interesting to show you the difference in the crumb (interior pockets) between today's loaf and the one that over proofed. Yeast eats sugar and burps carbon dioxide. CO2 from the yeast results in air pockets in your bread making it light and airy. In the case of over proofing, they ate all the sugar and there're no burps left to poof up the bread.</p>
