Somehow, every time I open the pantry, there's at least one box of Jiffy corn muffin mix sitting in it somewhere. No one knows how it got there, and it's usually long past its best-by date, yet there it is.

I underfilled the pan a bit so they came out more like cookies than muffins, but they still taste pretty good.

my classic banana chocolate chip muffins with a twist* *the twist is that I was out of honey so I blended up 4 dates instead and it was obviously a drier mixture than the honeyed version so the muffins have almost a scone like texture that i oddly enjoy

The pecan pumpkin muffins are out, and came out pretty well, using the ground flax seed meal instead of eggs. Next time I'll need to extend the baking time a bit.

It definitely introduced a different flavor. They were (and will be) a big hit.
