Simplest recuperative lunch of touch of tart with tamarind but edge of 🔥 with spicy sambar powder from India - Sambar (with toor dal) and vegetables (radish, carrot, eggplant, potato) with comforting uppuma (savory semolina cooked with curry leaves, dried red chilli, cashews and jalapeño for extra oomph)

Not particularly photogenic this dinner and leftovers from earlier in the week cooks - but no less glorious for Sat #Dinner

A lot of muri (puffed rice, mamra) for sure - dry toasted and tossed to refresh (that really fixes), some 'Bombay mix' mixture, cubes boiled potatoes, chopped red onions, chopped green chilies, homemade serrano chili sauce, some chili crisp why not, squirts of hot sauce. Mix, enjoy! 🔥

Didn't take a picture but had my childhood lunch at my moms', aloo paratha. I'll go over to her house tomorrow to learn her way of making it and samosa. The key to the flavour is in the aloo (potato) prep and spice mix.

This is the thing about #indian #cooking , with 10 different families you have 10 different recipes for the same thing. I think the trick is in the spice mix.

And you don't put meat in samosa.. ever. Its like North American Chinese food.. not quite right :)

Made idli batter. 😁 1 pm, yesterday - Started with soaking 4 gram methi seeds and 90 gram urad dal. In a separate comtainer I soaked 90 gram raw ponni rice + 90 boiled ponni rice. 1 am last night - Grinded everything. So, this batter fermented from from 2 am to 4.30 pm today. #indian #food
